Tropical Chia Pudding with Mango, Banana and Passion Fruit

Yep, still in chia pudding mode down here. This time, I made a variation on the mango chia pudding I made earlier this week. I took the mango mixture and mixed it with the set chia pudding, layered it with yoghurt and fresh fruit. So gorgeous, and so simple.

Tropical Chia Pudding with Mango, Banana and Passion Fruit

Ingredients (serves 2):
For the mango chia pudding layers:
1/2 cup almond milk
2 tbsp chia seeds
1.5 tsp honey
1/2 mango
1/4 banana

For the other layers: 
1 banana plus the remaining 3/4 banana from above
1 tsp lime juice
1/3 - 1/2 cup Greek yoghurt (depending on how big your glass and how thick your yoghurt layers)
2 passion fruit

Instructions (makes 2) :
1. As always, make the chia pudding first - take the chia seeds, almond or coconut milk, honey (or maple syrup, or whatever sweetener you like best), and stir well so that the seeds mix evenly and don’t sink to the bottom or stay floating on the top. Put in a container and place in the fridge for 3 hours or overnight.

2. When the chia mixture is ready, make the mango puree. Take the mango, 1/4 banana and the lime juice and blend together. Then, spoon it through the chia mixture, mixing it well.

3. Take the remainder of the banana and cut in small pieces. Divide it into four (a quarter per layer, per glass).

4. Begin 'plating' the pudding in two glasses. Start by pouring a layer of the chia mixture, then add a layer of Greek yoghurt, then a layer of banana and passion fruit. Top with another layer of chia, then a layer of yoghurt, and then finish off each glass by topping it with banana and passion fruit.
